Cream of Celery, Asparagus, Artichoke, Potato or Carrot Soup
Cream of Celery Soup Concentrate
(use as a substitute for same)
2 cups soymilk
2 Tbs cornstarch
4 tsps vegetable bouillon powder
1/4 tsp celery seed
1 cup finely chopped celery
1/2 tsp sugar or other sweetener
Put all ingredients in saucepan.
Cook over medium heat, stirring constantly, until mixture begins to thicken.
Continue cooking, stirring constantly, until mixture is very thick.
Use in casseroles, or thin with more soymilk to make soup or gravy.

Cream of Asparagus Soup Concentrate
Follow recipe for Cream of Celery Soup Concentrate, substituting 1 cup diced,
steamed asparagus for celery.
Omit celery seed, or use only a pinch.
Season with your favorite herbs.
Add salt and pepper to taste.

Cream of Artichoke Soup Concentrate
Follow recipe for Cream of Celery Soup Concentrate, substituting 1 cup
chopped canned artichoke hearts for celery.
Omit celery seed, or use only a pinch.
Season with your favorite herbs.
Add salt and pepper to taste.

Cream of Potato Soup Concentrate
Follow recipe for Cream of Celery Soup Concentrate, substituting 1 cup diced,
cooked potato cubes for celery.
Add salt and pepper to taste.

Cream of Carrot Soup Concentrate
Follow recipe for Cream of Celery Soup Concentrate, substituting 1 cup finely
shredded carrot for celery.
Simmer until carrots are tender.
Add salt and pepper to taste.
